The tri-tip cut of beef is from bottom sirloin, and is a small triangular piece that’s usually about two pounds.  It’s a hard to get cut, mostly popular on the West Coast, but when you can get it, it is worth its weight in gold.  You can use this bold rubs on tri-tip or any other cut of beef.  Its flavor is enhanced by the addition of a high-quality espresso powder.  The deep smoky tones of this rub work well on beef, chicken or pork.

Ingredients: paprika, salt, garlic, onion, black pepper, oregano, thyme, cayenne, espresso powder.
