Chinese Xinjiang Spice Blend
This spice blend is from a region of Asia that's home to a number of ethnic groups, including the Han, Kazakhs, Tajiks, Hui, Uyghur, Kyrgyz, Mongols, Tibetans, and Russians. Xinjiang Spice is spicy hot and zesty, and is traditionally used with meat and vegetable dishes. Himalayan pink salt is used, rather than soy as is common in other areas of Chinese cooking. If you add turmeric, the blend starts to taste more like a curry, due to the culinary influences of the Uygur region.
Ingredients: cumin, red pepper flakes, black pepper, ginger, Sichaun / Szechuan pepper, garlic, onion, anise, cardamom, chili powder, Himalayan pink salt.
