Our zesty mix of Greek herbs and spices includes lemon, oregano, basil and more. It makes an excellent rub or marinade for meats, and is also wonderful as a base for salad dressings and vinaigrette. This recipe is for slow-cooked lamb marinated with Greek spice and olive oil. Serves 8. You'll need:
- 1/2 cup extra-virgin olive oil
- 1 1/2 cups water
- 1 heaping tablespoon Home Cook's Pantry Greek Spice Blend
- 1 leg of lamb or rack of lamb (about 4-5 pounds)
- 2 1/2 pounds Yukon Gold or red fingerling potatoes, peeled and cut as desired
- Other vegetables as desired
Mix together the olive oil, water and Greek Spice Blend to make a marinade. Rub lamb with the marinade, and place in a large resealable bag or covered in a pan, turning to coat well halfway through. Refrigerate overnight.
Preheat oven to 350 degrees. Transfer lamb and marinade to roasting pan. Cover pan tightly with heavy foil. Roast for 1 hour, and then flip lamb. Cover again, and then reduce oven temperature to 300 degrees. Roast lamb an additional 2 hours.
Add potatoes to pan, and sprinkle with a little salt. Cover, and roast another hour (total of 4 hours for the lamb in the oven). Raise heat to 400 degrees. Uncover, and roast until potatoes are browned lightly, about 15 to 20 minutes.
